Lemon Chicken Romano is a zesty, pan-seared chicken dish coated in Parmesan and Romano cheeses, delivering a crispy texture with a bright lemon finish. Perfect for a quick and flavorful weeknight dinner.

  • 4 boneless, skinless chicken breasts
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup grated Romano cheese
  • 1 cup Italian-style breadcrumbs
  • 1 lemon, zested and juiced
  • 2 cloves garlic, minced
  • 2 eggs
  • 1/4 cup all-purpose flour
  • 3 tablespoons olive oil
  • Salt and black pepper, to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. In a shallow dish, combine Parmesan, Romano cheese, breadcrumbs, lemon zest, salt, and pepper.
  2. In another bowl, whisk the eggs with lemon juice and minced garlic.
  3. Lightly dredge each chicken breast in flour, then dip into the egg mixture, and finally coat with the cheese and breadcrumb mixture.
  4. Heat olive oil in a large skillet over medium heat.
  5. Cook the chicken breasts for 5-7 minutes on each side, or until golden brown and cooked through.
  6. Remove from heat and let rest for 2 minutes.
  7. Garnish with fresh parsley and serve with lemon wedges.

Notes

For extra zest, drizzle a little additional lemon juice over the chicken just before serving or serve alongside a light arugula salad.
