Lemon Chicken Soup

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups cooked shredded chicken
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 1/4 cup fresh lemon juice
  • 2 large eggs
  • 2 tablespoons chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and garlic; sauté until softened.
  2. Add chicken broth, carrots, and celery. Bring to a boil, then reduce heat and simmer until vegetables are tender.
  3. Stir in shredded chicken and heat through.
  4. In a small bowl, whisk eggs and lemon juice together.
  5. Slowly ladle some hot soup into the egg-lemon mixture while stirring constantly to temper the eggs.
  6. Gradually add the tempered egg mixture back into the pot, stirring continuously to create a silky texture. Heat gently but do not boil.
  7. Season with salt and pepper to taste and sprinkle with fresh parsley before serving.

Notes

For extra richness, add a splash of heavy cream or garnish with lemon zest for an added citrus punch.
