Lemon Lentil Soup

A bright and hearty lemon lentil soup that combines earthy lentils with zesty lemon for a comforting and nutritious meal.

Ingredients

  • 1 cup dry lentils, rinsed
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 6 cups vegetable broth
  • 1 teaspoon ground cumin
  • Salt and pepper, to taste
  • Juice of 1 large lemon
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, garlic, carrot, and celery, and sauté until vegetables are softened, about 5 minutes.
  2. Add rinsed lentils, ground cumin, and vegetable broth to the pot. Stir to combine.
  3. Bring the soup to a boil, then reduce heat and let simmer uncovered until lentils are tender, about 25 minutes.
  4. Season with salt and pepper to taste.
  5. Remove from heat and stir in lemon juice and chopped parsley.
  6. Serve hot, garnished with additional parsley if desired.

Notes

For extra protein, add cooked shredded chicken or serve with a dollop of Greek yogurt on top.
