Lemon Vinaigrette Dressing

Brighten up any salad with this zesty lemon vinaigrette! It’s a quick and easy dressing that’s perfect for adding a burst of fresh flavor.

Ingredients

  • 1/4 cup fresh lemon juice
  • 1/2 cup extra virgin olive oil
  • 2 tablespoons honey or maple syrup
  • 1 clove garlic, minced
  • 1/2 teaspoon Dijon mustard
  • Salt and freshly ground black pepper to taste

Instructions

  1. In a small bowl, whisk together the lemon juice, olive oil, honey (or maple syrup), minced garlic, and Dijon mustard.
  2. Season with salt and freshly ground black pepper to taste.
  3. Whisk until well combined and emulsified.
  4. Taste and adjust seasonings as needed.
  5. Store in an airtight container in the refrigerator.

Notes

For a richer flavor, try using infused olive oil, such as garlic or herb-infused oil. This vinaigrette is also delicious drizzled over grilled vegetables or fish.
