  • 1 lb ground beef
  • 2 cups mashed potatoes
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup cooked and crumbled bacon
  • 1/4 cup chopped green onions
  • 1/4 cup breadcrumbs
  • 1 egg
  • 1/4 cup ketchup
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine ground beef, breadcrumbs, egg, garlic powder, salt, and pepper; mix well.
  3. Gently fold in mashed potatoes, cheddar cheese, bacon, and green onions.
  4. Shape the mixture into a loaf and place it in a greased baking dish.
  5. Spread ketchup evenly over the top of the meatloaf.
  6. Bake for 50-60 minutes until fully cooked and the top is slightly caramelized.
  7. Let rest for 5 minutes before slicing and serving.
