This creamy macaroni corn casserole is a comforting and easy-to-make side dish or vegetarian main course. It’s perfect for potlucks, holidays, or a simple weeknight meal.

  • 1 pound elbow macaroni
  • 1/2 cup butter, melted
  • 1/2 cup all-purpose flour
  • 3 cups milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 2 cups shredded cheddar cheese
  • 2 (15-ounce) cans creamed corn
  • 1 (15-ounce) can whole kernel corn, drained
  • 1/4 cup bread crumbs

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9×13 inch baking dish.
  2. Cook macaroni according to package directions. Drain well.
  3. In a large saucepan, melt butter over medium heat. Stir in flour until smooth. Gradually whisk in milk until smooth. Bring to a simmer, stirring constantly.
  4. Reduce heat and simmer for 5 minutes, stirring occasionally, until thickened. Stir in salt, pepper, and garlic powder.
  5. Remove from heat and stir in cheddar cheese until melted.
  6. Add macaroni, creamed corn, and whole kernel corn to the cheese sauce. Stir to combine.
  7. Pour mixture into the prepared baking dish. Sprinkle with bread crumbs.
  8. Bake for 20-25 minutes, or until golden brown and bubbly.
  9. Let stand for 10 minutes before serving.

Notes

For a richer flavor, try using a blend of cheddar and Gruyere cheese. You can also add a dash of hot sauce or a sprinkle of paprika for extra flavor.
