  • 4 boneless, skinless chicken breasts
  • 2 large sweet potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • 1/4 cup maple syrup
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, toss sweet potatoes with 1 tablespoon olive oil, salt, and pepper. Spread in a single layer on a baking sheet.
  3. In a small bowl, whisk together maple syrup, Dijon mustard, apple cider vinegar, garlic powder, and smoked paprika.
  4. Pat chicken breasts dry and season with salt and pepper.
  5. Heat the remaining 1 tablespoon of olive oil in an oven-safe skillet over medium-high heat. Sear chicken breasts for 2-3 minutes per side, until golden brown.
  6. Pour maple glaze over the chicken breasts.
  7. Transfer skillet to the preheated oven and bake for 15-20 minutes, or until chicken is cooked through and sweet potatoes are tender.
  8. Garnish with fresh parsley and serve immediately.

Notes

For extra flavor, add a pinch of red pepper flakes to the maple glaze. Serve with a side of steamed green beans or roasted asparagus.
