Marinated Olives and Feta Cheese

A flavorful and easy-to-prepare dish featuring tangy feta cheese and a mix of olives marinated in aromatic herbs and olive oil, perfect for a delicious snack or appetizer.

  • 1 cup mixed olives (green and black)
  • 150g feta cheese, cut into cubes
  • 3 tbsp extra virgin olive oil
  • 1 garlic clove, thinly sliced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp red pepper flakes (optional)
  • 1 tbsp fresh lemon juice
  • 1 tbsp chopped fresh parsley
  • Freshly ground black pepper, to taste

Instructions

  1. In a medium bowl, combine olives, cubed feta, and sliced garlic.
  2. Add olive oil, lemon juice, dried oregano, dried thyme, and red pepper flakes (if using).
  3. Gently toss the mixture to coat the olives and feta evenly with the marinade.
  4. Cover the bowl and refrigerate for at least 2 hours to allow flavors to meld.
  5. Before serving, sprinkle with chopped fresh parsley and freshly ground black pepper.
  6. Serve chilled or at room temperature as a tasty appetizer or snack.

Notes

For an extra burst of flavor, try adding a splash of balsamic vinegar or a handful of toasted pine nuts before serving.
