  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1/2 cup sun-dried tomatoes, oil-packed, drained and chopped
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh parsley, chopped, for garnish

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add chicken and cook until browned and cooked through. Remove chicken and set aside.
  2. Add onion to the pot and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  3. Pour in chicken broth and diced tomatoes. Bring to a simmer.
  4. Stir in sun-dried tomatoes, heavy cream, Parmesan cheese, Italian seasoning, salt, and pepper.
  5. Add the cooked chicken back to the pot and simmer for 10 minutes, allowing the flavors to meld.
  6. Serve hot, garnished with fresh parsley.

Notes

For an extra layer of flavor, add a pinch of red pepper flakes. Serve with crusty bread for dipping.
