No Bake Classic Woolworth Cheesecake

Enjoy this creamy, no-bake classic Woolworth cheesecake with a buttery biscuit crust, perfect for a quick and delicious dessert.

  • 200g digestive biscuits
  • 100g unsalted butter, melted
  • 500g cream cheese, softened
  • 250ml thickened cream
  • 150g powdered sugar
  • 2 tsp vanilla extract
  • 2 tbsp lemon juice

Instructions

  1. Crush the digestive biscuits finely and mix with the melted butter until well combined.
  2. Press the biscuit mixture evenly into the base of a 23cm springform pan to form the crust. Refrigerate for 30 minutes.
  3. In a large bowl, beat the cream cheese until smooth and creamy.
  4. Add powdered sugar, vanilla extract, and lemon juice; continue to beat until combined.
  5. In a separate bowl, whip the thickened cream until stiff peaks form.
  6. Gently fold the whipped cream into the cream cheese mixture until smooth and well combined.
  7. Pour the filling over the chilled biscuit crust and spread evenly.
  8. Refrigerate for at least 4 hours or overnight until set.
  9. Carefully remove the cheesecake from the springform pan, slice, and serve chilled.

Notes

For added flavor, top with fresh berries or a drizzle of fruit compote before serving.
