Delicious No-Bake Pumpkin Cheesecake Slice

This No-Bake Pumpkin Cheesecake is the perfect fall dessert! Creamy, decadent, and incredibly easy to make, it’s a delightful treat without any baking required.

  • 1 ½ cups graham cracker crumbs
  • 6 tablespoons unsalted butter, melted
  • ¼ cup granulated sugar
  • 2 (8 ounce) packages cream cheese, softened
  • 1 (15 ounce) can pumpkin puree
  • 1 cup powdered sugar
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • Optional: Whipped cream and gingersnap cookies for garnish

Instructions

  1. In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Press mixture into the bottom of a 9-inch springform pan.
  2. In a large bowl, beat cream cheese until smooth. Add pumpkin puree, powdered sugar, pumpkin pie spice, and vanilla extract. Beat until well combined.
  3. In a separate bowl, whip heavy cream until stiff peaks form. Gently fold whipped cream into the pumpkin cream cheese mixture.
  4. Pour cheesecake filling over the graham cracker crust. Spread evenly.
  5. Cover and refrigerate for at least 4 hours, or preferably overnight, to allow the cheesecake to set.
  6. Before serving, garnish with whipped cream and crushed gingersnap cookies, if desired.
  7. Carefully remove the sides of the springform pan and slice to serve.

Notes

For a deeper pumpkin flavor, add an additional ½ teaspoon of pumpkin pie spice. Garnish with a sprinkle of cinnamon or chopped pecans for added texture and flavor.
