  • 1 (9-inch) pie crust, pre-baked
  • 1 ½ cups granulated sugar
  • ¼ cup unsweetened cocoa powder
  • ¼ cup cornstarch
  • ¼ teaspoon salt
  • 3 cups milk
  • 4 large egg yolks, lightly beaten
  • 2 tablespoons butter
  • 1 teaspoon vanilla extract

Instructions

  1. In a medium saucepan, whisk together sugar, cocoa powder, cornstarch, and salt.
  2. Gradually whisk in milk until smooth.
  3. Cook over medium heat, stirring constantly, until the mixture begins to thicken and bubble.
  4. Reduce heat to low and cook for 1 minute more, stirring constantly.
  5. Remove from heat. Gradually whisk about ½ cup of the hot mixture into the egg yolks, then pour the egg yolk mixture back into the saucepan.
  6. Cook over low heat, stirring constantly, for 1 minute more.
  7. Remove from heat and stir in butter and vanilla extract until smooth.
  8. Pour the chocolate filling into the pre-baked pie crust.
  9. Cover the pie with plastic wrap, pressing it gently onto the surface of the filling to prevent a skin from forming.
  10. Refrigerate for at least 3 hours, or preferably overnight, to allow the filling to set completely.
  11. Serve chilled.
