Omurice Japanese Rice Omelet

Omurice is a popular Japanese dish featuring a flavorful fried rice wrapped in a soft, fluffy omelet, combining Western omelet techniques with Japanese flavors for a delicious, comforting meal.

  • 2 cups cooked white rice
  • 2 eggs
  • 1/2 cup diced chicken breast
  • 1/4 cup diced onion
  • 1/4 cup diced carrot
  • 1/4 cup frozen peas
  • 2 tablespoons ketchup
  • 1 tablespoon soy sauce
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste

Instructions

  1. Heat vegetable oil in a skillet over medium heat. Add diced chicken and cook until no longer pink.
  2. Add diced onion and carrot; sauté until softened.
  3. Stir in cooked rice, peas, ketchup, and soy sauce. Cook, stirring, for 2–3 minutes. Season with salt and pepper. Remove from heat.
  4. In a bowl, beat eggs lightly with a pinch of salt.
  5. Heat a non-stick pan over medium-low heat and pour in half the beaten eggs, swirling to form a thin omelet.
  6. Once the omelet is mostly set but still slightly runny on top, place half the fried rice in the center.
  7. Fold the edges of the omelet over the rice, forming an oval shape, then carefully slide it onto a plate.
  8. Repeat steps 5–7 for the second serving.
  9. Optionally, drizzle additional ketchup on top before serving.

Notes

For extra flavor, add a splash of Worcestershire sauce to the rice mixture or use chicken broth instead of soy sauce. Serve with a side of simple green salad for a balanced meal.
