One-Pan Chicken Lo Mein

This One-Pan Chicken Lo Mein is a quick and easy weeknight dinner that’s packed with flavor. Tender chicken, vibrant vegetables, and perfectly cooked noodles all come together in a savory sauce for a satisfying meal with minimal cleanup.

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 onion, sliced
  • 2 carrots, julienned
  • 2 bell peppers (any color), sliced
  • 1 cup sliced mushrooms
  • 4 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1/4 cup soy sauce
  • 2 tablespoons hoisin sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon brown sugar
  • 8 ounces lo mein noodles, cooked according to package directions
  • 2 green onions, sliced for garnish
  • Sesame seeds, for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet or wok over medium-high heat.
  2. Add chicken and cook until browned and cooked through. Remove chicken from skillet and set aside.
  3. Add onion, carrots, bell peppers, and mushrooms to the skillet and cook until softened, about 5-7 minutes.
  4. Add garlic and ginger and cook for 1 minute more, until fragrant.
  5. In a small bowl, whisk together soy sauce, hoisin sauce, sesame oil, rice vinegar, and brown sugar.
  6. Pour the sauce over the vegetables and bring to a simmer.
  7. Add the cooked lo mein noodles and cooked chicken to the skillet and toss to combine.
  8. Cook for 2-3 minutes, or until the noodles are heated through and the sauce has thickened slightly.
  9. Garnish with green onions and sesame seeds, if desired. Serve immediately.

Notes

For a spicier dish, add a pinch of red pepper flakes to the sauce. You can also add other vegetables like broccoli, snow peas, or bok choy.
