One-Pan Cranberry Rosemary Chicken

This One-Pan Cranberry Rosemary Chicken is a flavorful and easy-to-make dish combining tender chicken breasts with tart cranberries and fragrant rosemary for a perfect weeknight dinner.

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh cranberries
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 1/4 cup chicken broth
  • 1 tablespoon honey
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Season the chicken breasts with salt, pepper, and half of the chopped rosemary.
  3. Heat olive oil in a large oven-safe skillet over medium-high heat.
  4. Brown the chicken breasts for 3-4 minutes on each side until golden.
  5. Add minced garlic and fresh cranberries around the chicken in the skillet.
  6. Pour chicken broth and honey evenly over the chicken and cranberries.
  7. Sprinkle remaining rosemary over the top.
  8. Transfer the skillet to the oven and bake for 20 minutes or until the chicken is cooked through.
  9. Remove from oven and let rest for 5 minutes before serving.

Notes

For a richer sauce, stir in a tablespoon of butter into the pan juices before serving. Serve with roasted vegetables or mashed potatoes.
