One-Pot Lamb Kalya with Yogurt and Cream

This rich and aromatic One-Pot Lamb Kalya features tender lamb simmered in a creamy yogurt and spice sauce, delivering a comforting and flavorful Indian-inspired dish perfect for any occasion.

  • 1 lb lamb shoulder, cut into cubes
  • 1 cup plain yogurt
  • 1/2 cup heavy cream
  • 2 tbsp ghee or oil
  • 1 large onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tbsp ginger, grated
  • 2 green chilies, slit
  • 1 tsp cumin seeds
  • 1 tbsp coriander powder
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp garam masala
  • Salt to taste
  • 1 cup water or lamb broth
  • Fresh coriander leaves for garnish

Instructions

  1. Heat ghee in a heavy-bottomed pot over medium heat and add cumin seeds; let them splutter.
  2. Add chopped onions and sauté until golden brown.
  3. Stir in garlic, ginger, and green chilies; cook for 2 minutes.
  4. Add lamb cubes and brown on all sides for about 5-7 minutes.
  5. Mix in coriander powder, turmeric, red chili powder, and salt; cook spices for 2 minutes.
  6. Lower the heat and whisk yogurt until smooth, then add to the pot; stir continuously to avoid curdling.
  7. Add water or broth, cover the pot, and simmer on low heat for 1 to 1.5 hours until the lamb is tender.
  8. Stir in heavy cream and garam masala; cook uncovered for another 10 minutes until the sauce thickens.
  9. Garnish with fresh coriander leaves before serving.

Notes

For extra richness, garnish with toasted cashews or serve with warm naan or steamed basmati rice.
