Orange Rosemary Roasted Chicken

This Orange Rosemary Roasted Chicken combines juicy, tender poultry with fragrant rosemary and zesty orange, creating a flavorful and aromatic dish perfect for any dinner.

  • 1 whole chicken (about 4 lbs)
  • 2 oranges, sliced
  • 3 sprigs fresh rosemary
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup chicken broth
  • 1 tbsp honey (optional)

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Pat the chicken dry and rub with olive oil, salt, pepper, and garlic all over.
  3. Stuff the cavity with orange slices and rosemary sprigs.
  4. Place the chicken in a roasting pan and arrange additional orange slices around it.
  5. Pour chicken broth into the pan to keep it moist during roasting.
  6. Roast the chicken for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C), basting occasionally with pan juices.
  7. If desired, brush honey over the chicken in the last 10 minutes for a glazed finish.
  8. Remove from oven and let rest for 10 minutes before carving.

Notes

For extra flavor, marinate the chicken with orange juice and rosemary overnight before roasting.
