Parmesan Potatoes

Crispy on the outside and tender inside, Parmesan Potatoes are a flavorful side dish featuring golden roasted potatoes coated with Parmesan cheese and herbs.

  • 2 pounds baby potatoes, halved
  • 3 tablespoons olive oil
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme)
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss the halved potatoes with olive oil, garlic powder, Italian herbs, salt, and pepper until evenly coated.
  3. Sprinkle the grated Parmesan cheese over the potatoes and toss gently to combine.
  4. Spread the potatoes in a single layer on the prepared baking sheet.
  5. Roast in the preheated oven for 25-30 minutes, flipping halfway through, until the potatoes are golden brown and crispy.
  6. Remove from oven and sprinkle with fresh parsley if desired. Serve warm.

Notes

For extra crispiness, soak the potatoes in cold water for 30 minutes before cooking and pat them dry thoroughly.
