Peanut Butter Balls with Rice Krispies are a simple no-bake treat combining creamy peanut butter, crispy cereal, and sweet chocolate for a crunchy, satisfying snack.

  • 1 cup creamy peanut butter
  • 1/2 cup honey or maple syrup
  • 3 cups Rice Krispies cereal
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon coconut oil

Instructions

  1. In a large mixing bowl, combine peanut butter, honey, and vanilla extract until smooth.
  2. Gently fold in Rice Krispies cereal until evenly coated.
  3. Shape the mixture into 1-inch balls and place them on a parchment-lined baking sheet.
  4. Place the balls in the refrigerator to firm up for about 30 minutes.
  5. Meanwhile, melt chocolate chips and coconut oil together in a microwave-safe bowl in 30-second intervals, stirring until smooth.
  6. Dip each peanut butter ball into the melted chocolate, allowing excess to drip off, then return to the parchment-lined sheet.
  7. Refrigerate the chocolate-coated balls for another 30 minutes or until chocolate is set.
  8. Store in an airtight container in the refrigerator.

Notes

For an extra crunch, sprinkle chopped peanuts on top of the chocolate coating before it sets.
