Peruvian-Style Roast Chicken

  • 1 whole chicken (about 4 lbs)
  • 4 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 2 tablespoons olive oil
  • 1 tablespoon ground cumin
  • 1 tablespoon paprika
  • 1 tablespoon dried oregano
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1/4 cup fresh lime juice
  • 1/4 cup fresh cilantro, chopped
  • 1 red chili pepper, seeded and minced (optional)
  • 1/2 cup chicken broth

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a bowl, combine garlic, soy sauce, olive oil, cumin, paprika, oregano, salt, pepper, lime juice, cilantro, and chili pepper to create the marinade.
  3. Rub the marinade all over the chicken, making sure to coat under the skin and inside the cavity. Marinate for at least 1 hour, preferably overnight in the refrigerator.
  4. Place the chicken in a roasting pan and pour chicken broth into the bottom of the pan to keep it moist.
  5. Roast the chicken for 1 to 1 1/4 hours, basting occasionally with pan juices, until the internal temperature reaches 165°F (74°C) and the skin is golden and crispy.
  6. Remove chicken from oven and let rest for 10 minutes before carving.
  7. Serve with a side of Peruvian green sauce (aji verde) or lime wedges.

Notes

For extra crispy skin, broil the chicken for the last 5 minutes of cooking, watching closely to prevent burning.
