This Pesto Chicken Flatbread features a crispy base topped with savory grilled chicken, fresh basil pesto, melted mozzarella, and juicy cherry tomatoes for a flavorful and easy meal.

  • 1 flatbread (8-10 inches)
  • 1/2 cup cooked chicken breast, sliced
  • 3 tablespoons basil pesto
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup cherry tomatoes, halved
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the flatbread on a baking sheet and brush lightly with olive oil.
  3. Spread the basil pesto evenly over the flatbread.
  4. Arrange the sliced chicken breast evenly on top of the pesto.
  5. Sprinkle shredded mozzarella cheese over the chicken.
  6. Distribute the halved cherry tomatoes over the cheese.
  7. Season with salt and pepper as desired.
  8. Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly and the flatbread edges are golden.
  9. Remove from oven and garnish with fresh basil leaves.
  10. Slice and serve warm.

Notes

For extra flavor, drizzle a little balsamic glaze over the flatbread just before serving.
