Enjoy all the classic flavors of a Philly Cheesesteak in a comforting soup! This easy recipe combines tender beef, onions, peppers, and a creamy, cheesy broth for a satisfying meal.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound sirloin steak, thinly sliced
  • 1 large onion, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 4 cloves garlic, minced
  • 6 cups beef broth
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste
  • 8 ounces cream cheese, softened
  • 1 cup shredded provolone cheese
  • Optional: crusty rolls or toasted bread for serving

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add the sliced steak and cook until browned, about 5-7 minutes. Remove the steak from the pot and set aside.
  2. Add the sliced onion and bell peppers to the pot and cook until softened, about 8-10 minutes. Add the minced garlic and cook for another minute until fragrant.
  3. Pour in the beef broth and Worcestershire sauce. Stir in the dried thyme, salt, and pepper. Bring to a simmer.
  4. Reduce the heat to low and stir in the softened cream cheese until fully melted and smooth.
  5. Add the cooked steak back to the pot.
  6. Stir in the shredded provolone cheese until melted and the soup is creamy.
  7. Taste and adjust seasonings as needed.
  8. Serve hot, garnished with extra provolone cheese if desired, and with crusty rolls or toasted bread for dipping.

Notes

For an extra cheesy soup, top each serving with additional provolone or mozzarella cheese and broil until melted and bubbly.
