Pineapple Chicken

Pineapple Chicken is a deliciously sweet and savory dish where tender chicken is cooked with juicy pineapple and a tangy sauce, perfect for a quick and flavorful dinner.

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup pineapple chunks (fresh or canned, drained)
  • 1/2 cup pineapple juice
  • 2 tbsp soy sauce
  • 1 tbsp hoisin sauce
  • 1 tbsp rice vinegar
  • 2 tsp cornstarch
  • 1 tbsp vegetable oil
  • 1/2 cup chopped bell pepper (red or green)
  • 2 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • 2 green onions, sliced
  • Salt and pepper to taste

Instructions

  1. In a small bowl, whisk together pineapple juice, soy sauce, hoisin sauce, rice vinegar, and cornstarch until smooth; set aside.
  2. Heat vegetable oil in a large skillet over medium-high heat. Add chicken pieces, season with salt and pepper, and cook until golden and cooked through, about 5-7 minutes.
  3. Add garlic, ginger, and bell pepper to the skillet and sauté for 2 minutes until fragrant and slightly softened.
  4. Pour the sauce mixture into the skillet, stirring constantly until it thickens and coats the chicken and vegetables.
  5. Add pineapple chunks and cook for an additional 2 minutes to warm through.
  6. Remove from heat and garnish with sliced green onions before serving.

Notes

Serve Pineapple Chicken over steamed jasmine rice or quinoa for a complete meal. For extra heat, add a pinch of red pepper flakes or a dash of sriracha sauce.
