Pineapple Cowboy Candy

Sweet, spicy, and smoky, this Pineapple Cowboy Candy is a unique and addictive treat. Candied pineapple slices are infused with chili and brown sugar for a delicious snack or topping.

  • 1 fresh pineapple, peeled, cored, and sliced into 1/4-inch thick rings
  • 1 cup packed light brown sugar
  • 1/4 cup water
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon chili powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (or more, to taste)
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 225°F (107°C). Line a baking sheet with parchment paper.
  2. In a large skillet or saucepan, combine the brown sugar, water, apple cider vinegar, chili powder, smoked paprika, cayenne pepper, and salt. Bring to a simmer over medium heat, stirring until the sugar is dissolved.
  3. Add the pineapple slices to the skillet in a single layer. Cook for about 2-3 minutes per side, until the pineapple is slightly softened and translucent.
  4. Remove the pineapple slices from the skillet and arrange them in a single layer on the prepared baking sheet.
  5. Spoon a small amount of the syrup from the skillet over each pineapple slice.
  6. Bake for 2-3 hours, flipping the pineapple slices every 30 minutes, until they are candied and slightly sticky.
  7. Remove from the oven and let the pineapple slices cool completely on the baking sheet. They will continue to harden as they cool.
  8. Store in an airtight container at room temperature.

Notes

Serve as a snack, appetizer, or topping for burgers, pizza, or ice cream. For extra heat, increase the amount of cayenne pepper.
