  • 1 cup crushed graham crackers
  • 1/2 cup melted butter
  • 1 cup chopped pistachios
  • 1 package (3.4 oz) instant pistachio pudding mix
  • 2 cups cold milk
  • 1 cup shredded coconut
  • 1 cup whipped topping (such as Cool Whip)
  • 1 cup semi-sweet chocolate chips
  • 1 package (8 oz) cream cheese, softened
  • 1/2 cup powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C). Mix crushed graham crackers with melted butter and press into the bottom of a 9×13-inch pan. Bake for 8 minutes, then let cool.
  2. In a large bowl, beat cream cheese and powdered sugar until smooth.
  3. Whisk together instant pistachio pudding mix and cold milk until thickened.
  4. Fold pudding into the cream cheese mixture until well combined.
  5. Layer the cooled crust with shredded coconut and chopped pistachios evenly.
  6. Spread the pistachio mixture over the crust and sprinkle chocolate chips on top.
  7. Top with an even layer of whipped topping and refrigerate for at least 4 hours or overnight for best results.
  8. Slice and serve chilled.

Notes

For added texture, sprinkle extra chopped pistachios on top before serving. You can also substitute white chocolate chips for a sweeter finish.
