Pollo Asado is a flavorful Mexican grilled chicken dish marinated in a blend of citrus and spices, offering a juicy and zesty experience perfect for any meal.

  • 4 bone-in, skin-on chicken thighs
  • 2 oranges, juiced
  • 1 lime, juiced
  • 4 garlic cloves, minced
  • 1/4 cup olive oil
  • 1 tablespoon ground cumin
  • 1 tablespoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. In a large bowl, combine orange juice, lime juice, garlic, olive oil, cumin, smoked paprika, oregano, chili powder, salt, and pepper to create the marinade.
  2. Add the chicken thighs to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 2 hours, preferably overnight.
  3. Preheat the grill to medium-high heat.
  4. Remove chicken from the marinade and place on the grill, cooking for 6–8 minutes on each side or until internal temperature reaches 165°F (75°C).
  5. Remove from grill and let rest for 5 minutes.
  6. Garnish with fresh chopped cilantro and serve.

Notes

For extra smoky flavor, add a dash of chipotle powder to the marinade or serve with grilled lime wedges.
