poppy seed chicken casserole

This creamy poppy seed chicken casserole is a comforting and easy-to-make classic. Tender chicken is coated in a rich sauce and topped with a buttery cracker crust for a satisfying weeknight meal.

  • 4 cups cooked chicken, shredded
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 2 tablespoons poppy seeds
  • 1/4 teaspoon black pepper
  • 1 1/2 cups crushed Ritz crackers
  • 6 tablespoons butter, melted

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large bowl, combine the cooked chicken, cream of chicken soup, sour cream, mayonnaise, poppy seeds, and pepper. Mix well.
  3. Pour the chicken mixture into a greased 9×13 inch baking dish.
  4. In a separate bowl, combine the crushed Ritz crackers and melted butter. Mix well.
  5. Sprinkle the cracker mixture evenly over the chicken mixture.
  6. Bake for 20-25 minutes, or until golden brown and bubbly.
  7. Let stand for a few minutes before serving.
