Delicious Possum Pie

This classic Possum Pie is a decadent no-bake dessert with layers of creamy filling, chocolate ganache, and a crunchy pecan crust. It’s a delightful treat perfect for any occasion.

  • For the Crust:
  • 1 ½ cups pecan halves
  • ¼ cup all-purpose flour
  • 6 tablespoons unsalted butter, melted
  • ¼ cup packed brown sugar
  • ⅛ teaspoon salt
  • For the Filling:
  • 8 ounces cream cheese, softened
  • 1 (14 ounce) can sweetened condensed milk
  • 8 ounces frozen whipped topping, thawed
  • 1 teaspoon vanilla extract
  • For the Chocolate Ganache:
  • 6 ounces semi-sweet chocolate chips
  • ½ cup heavy cream

Instructions

  1. Prepare the Crust: Preheat oven to 350°F (175°C). In a food processor, pulse pecan halves until finely ground. Transfer to a bowl and mix with flour, melted butter, brown sugar, and salt. Press the mixture evenly into the bottom of a 9-inch pie plate.
  2. Bake the Crust: Bake for 12-15 minutes, or until golden brown. Let cool completely.
  3. Make the Filling: In a large bowl, beat softened cream cheese until smooth. Gradually add sweetened condensed milk, mixing until well combined. Gently fold in the thawed whipped topping and vanilla extract.
  4. Assemble the Pie: Pour the filling into the cooled pecan crust, spreading evenly.
  5. Prepare the Ganache: Place chocolate chips in a heatproof bowl. In a small saucepan, heat heavy cream until simmering. Pour the hot cream over the chocolate chips and let sit for 1 minute. Whisk until smooth and glossy.
  6. Finish the Pie: Pour the chocolate ganache over the filling, spreading evenly. Refrigerate for at least 4 hours, or preferably overnight, to allow the pie to set completely.
  7. Serve: Slice and serve chilled. Enjoy!

Notes

For an extra layer of flavor, sprinkle chopped pecans or chocolate shavings on top of the ganache before refrigerating.
