  • 1 (4-5 pound) prime rib roast
  • 2 tablespoons olive oil
  • 2 tablespoons kosher salt
  • 1 tablespoon black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon dried thyme
  • 1 tablespoon dried rosemary
  • 1 medium onion, quartered
  • 4 cloves garlic, minced
  • 2 cups beef broth

Instructions

  1. Preheat oven to 450°F (232°C).
  2. In a small bowl, combine olive oil, salt, pepper, garlic powder, thyme, and rosemary.
  3. Rub the mixture all over the prime rib roast.
  4. Place the quartered onion and minced garlic in the bottom of a roasting pan.
  5. Place the prime rib roast on top of the onions and garlic.
  6. Roast for 15 minutes, then reduce the oven temperature to 325°F (163°C).
  7. Continue roasting until the internal temperature reaches 125°F (52°C) for rare, 135°F (57°C) for medium-rare, or 145°F (63°C) for medium. Use a meat thermometer to check the temperature.
  8. Remove the roast from the oven and tent it with foil. Let it rest for at least 20 minutes before carving.
  9. While the roast is resting, pour the beef broth into the roasting pan and scrape up any browned bits from the bottom. This will be the base for your gravy.
  10. Carve the prime rib roast against the grain and serve with the pan juices or gravy.
