  • 3 ripe bananas, mashed
  • 1/4 cup unsweetened applesauce
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1/2 cup vanilla protein powder
  • 1 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup chopped walnuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a loaf pan.
  2. In a large bowl, mash bananas. Add applesauce, honey, vanilla, and egg. Mix well.
  3. In a separate bowl, whisk together protein powder, flour, baking soda, cinnamon, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  5. Fold in walnuts (if using).
  6. Pour batter into the prepared loaf pan.
  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

For a richer flavor, use brown butter instead of applesauce. Serve warm with a drizzle of honey.
