This Pumpkin Spice French Toast Casserole blends warm autumn spices with creamy pumpkin and custardy bread, making it a perfect cozy breakfast or brunch dish.

  • 1 loaf French bread, cut into 1-inch cubes
  • 4 large eggs
  • 1 1/2 cups whole milk
  • 1 cup pumpkin puree
  • 1/2 cup brown sugar
  • 1 tablespoon vanilla extract
  • 2 teaspoons pumpkin pie spice
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup chopped pecans (optional)
  • Powdered sugar, for serving
  • Maple syrup, for serving

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. Place the cubed French bread evenly in the prepared baking dish.
  3. In a large bowl, whisk together eggs, milk, pumpkin puree, brown sugar, vanilla extract, pumpkin pie spice, cinnamon, and salt until smooth.
  4. Pour the egg mixture evenly over the bread cubes, pressing down gently to make sure all bread is soaked.
  5. Sprinkle chopped pecans on top, if using.
  6. Cover the dish with plastic wrap and refrigerate for at least 2 hours or overnight to allow the bread to absorb the custard.
  7. Remove the plastic wrap and bake uncovered for 45–50 minutes, or until the top is golden and the casserole is set in the middle.
  8. Let cool for 5 minutes before serving. Dust with powdered sugar and drizzle with maple syrup if desired.

Notes

For extra richness, serve with whipped cream or a dollop of vanilla yogurt and a sprinkle of cinnamon.
