  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • For the Streusel Topping:
  • 1/2 cup all-purpose flour
  • 1/4 cup packed light brown sugar
  • 1/4 cup rolled oats
  • 1/4 teaspoon ground cinnamon
  • 1/4 cup cold unsalted butter, cut into small pieces
  • For the Cheesecake Filling:
  • 3 (8 ounce) packages cream cheese, softened
  • 1 1/4 cups granulated sugar
  • 1 (15 ounce) can pumpkin puree
  • 1/4 cup sour cream
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice

Instructions

  1. Make the Crust: Preheat oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press mixture into the bottom of a 9-inch springform pan.
  2. Make the Streusel Topping: In a separate bowl, combine flour, brown sugar, oats, and cinnamon. Cut in cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  3. Make the Cheesecake Filling: In a large bowl, beat cream cheese and sugar until smooth and creamy. Beat in pumpkin puree and sour cream until well combined. Add eggs one at a time, beating well after each addition. Stir in vanilla extract and pumpkin pie spice.
  4. Assemble and Bake: Pour cheesecake filling over the crust. Sprinkle streusel topping evenly over the filling.
  5. Bake for 60-70 minutes, or until the edges are set and the center is slightly jiggly.
  6. Turn off the oven and let the cheesecake cool inside for 1 hour.
  7. Remove the cheesecake from the oven and let it cool completely at room temperature.
  8. Cover and refrigerate for at least 4 hours, or preferably overnight, before serving.
  9. Remove the sides of the springform pan before slicing and serving.

Notes

Serve with a dollop of whipped cream or a sprinkle of cinnamon for an extra touch.
