This comforting Ravioli Soup is a quick and easy weeknight meal, perfect for using up leftover ravioli or enjoying a warm, satisfying bowl of goodness. Packed with flavor and ready in under 30 minutes, it’s a family favorite!

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 4 cups chicken broth
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (9 ounce) package refrigerated cheese ravioli
  • 1 cup chopped fresh spinach
  • Grated Parmesan cheese, for garnish

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  2. Stir in crushed tomatoes, chicken broth, oregano, salt, and pepper. Bring to a simmer.
  3. Add ravioli and cook according to package directions, usually about 5-7 minutes, or until tender.
  4. Stir in spinach and cook until wilted, about 1 minute.
  5. Serve hot, garnished with grated Parmesan cheese.

Notes

For a richer flavor, use homemade chicken broth or add a dollop of pesto to each serving.
