Sausage and Courgette Pasta

A hearty and flavorful pasta dish combining savory sausage and fresh courgette, perfect for a quick weeknight dinner.

Ingredients

  • 200g pasta (penne or fusilli)
  • 2 sausages, sliced
  • 1 large courgette (zucchini), thinly sliced
  • 2 cloves garlic, minced
  • 1 small onion, chopped
  • 2 tbsp olive oil
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Fresh basil leaves, for garnish

Instructions

  1. Cook the pasta in salted boiling water according to package instructions until al dente. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, sauté until softened.
  3. Add the sliced sausages to the skillet and cook until browned and cooked through.
  4. Stir in the sliced courgette and cook for 4-5 minutes until tender but still crisp.
  5. Toss the cooked pasta into the skillet with sausage and courgette, mixing well.
  6. Season with salt and pepper to taste. Remove from heat and sprinkle with grated Parmesan cheese.
  7. Garnish with fresh basil leaves and serve warm.

Notes

For extra flavor, add a pinch of red chili flakes while cooking the sausages or a squeeze of lemon juice before serving.
