This hearty Sausage Sweet Potato Kale Soup is packed with flavor and nutrients. It’s a comforting and healthy meal perfect for a chilly evening.

Ingredients

  • 1 pound Italian sausage, casings removed
  • 1 large sweet potato, peeled and diced
  • 1 bunch kale, stemmed and chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add sausage and cook, breaking it up with a spoon, until browned. Remove sausage from pot and set aside.
  2. Add onion and garlic to the pot and cook until softened, about 5 minutes.
  3. Add sweet potato, thyme, and red pepper flakes (if using) to the pot and cook for another 5 minutes, stirring occasionally.
  4. Pour in chicken broth and bring to a boil. Reduce heat and simmer for 15 minutes, or until sweet potatoes are tender.
  5. Stir in kale and cooked sausage. Cook until kale is wilted, about 5 minutes.
  6. Season with salt and pepper to taste.
  7. Serve hot.

Notes

For extra flavor, try adding a squeeze of lemon juice before serving. You can also garnish with grated Parmesan cheese or a dollop of Greek yogurt.
