shrimp casserole

This creamy shrimp casserole combines tender shrimp with a flavorful cheese sauce and crunchy topping, making it a comforting and delicious seafood bake perfect for dinner.

  • 1 pound shrimp, peeled and deveined
  • 2 cups cooked rice
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 1 small onion, finely chopped
  • 1/2 cup celery, chopped
  • 1 cup frozen peas, thawed
  • 1 tablespoon lemon juice
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup crushed buttery crackers or bread crumbs
  • 2 tablespoons melted butter

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine sour cream, mayonnaise, lemon juice, garlic powder, salt, and pepper.
  3. Add cooked rice, chopped onion, celery, peas, and shredded cheddar cheese to the bowl and stir to combine.
  4. Gently fold in the shrimp until evenly mixed with the sauce and rice mixture.
  5. Transfer the mixture to a greased 9×13 inch casserole dish and spread evenly.
  6. In a small bowl, mix crushed crackers with melted butter and sprinkle evenly over the casserole.
  7. Bake uncovered for 25-30 minutes, until the topping is golden brown and the casserole is heated through.
  8. Remove from oven, let cool slightly, and serve warm.

Notes

For an extra burst of flavor, add a sprinkle of paprika on top before baking or garnish with fresh parsley after baking.
