Shrimp Fried Rice

Shrimp Fried Rice is a flavorful, easy-to-make dish combining succulent shrimp with vegetables and rice, stir-fried to perfection for a quick and satisfying meal.

  • 2 cups cooked jasmine rice (preferably day-old)
  • 1/2 pound shrimp, peeled and deveined
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 1/2 cup frozen peas and carrots
  • 2 eggs, lightly beaten
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 2 green onions, sliced
  • Salt and pepper to taste

Instructions

  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  2. Add shrimp, season with salt and pepper, and cook until pink and opaque, about 2-3 minutes. Remove shrimp and set aside.
  3. Add remaining 1 tablespoon of oil to the skillet. Sauté garlic and onion until fragrant and translucent.
  4. Add frozen peas and carrots, cook for 2 minutes until tender.
  5. Push vegetables to one side of the skillet and pour beaten eggs into the empty side. Scramble until cooked through.
  6. Add cooked rice to the skillet, breaking up any clumps, and stir everything together.
  7. Return shrimp to the skillet. Pour in soy sauce, oyster sauce, and sesame oil, stirring to evenly combine.
  8. Cook for another 2-3 minutes until heated through.
  9. Remove from heat, garnish with sliced green onions, and serve warm.

Notes

For extra flavor, add a dash of chili flakes or use brown rice for a healthier option.
