  • 1.5 lbs boneless, skinless chicken thighs
  • 1 large onion, chopped
  • 2 bell peppers (red, yellow, or orange), sliced
  • 4 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can tomato sauce
  • 1 cup sliced mushrooms
  • 1/2 cup dry red wine (optional)
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh parsley, chopped (for garnish)
  • Cooked pasta or polenta, for serving

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Brown chicken thighs on both sides.
  2. Transfer chicken to a slow cooker.
  3. Add onion and bell peppers to the skillet and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  4. Pour crushed tomatoes, tomato sauce, red wine (if using), mushrooms, oregano, basil, salt, and pepper into the skillet. Bring to a simmer.
  5. Pour the sauce over the chicken in the slow cooker.
  6. Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until the chicken is tender and easily shreds.
  7. Shred the chicken with two forks.
  8. Serve over cooked pasta or polenta. Garnish with fresh parsley.
