Delicious Slow Cooker Chicken Korma

  • 2 lbs boneless, skinless chicken thighs, cut into pieces
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1/2 cup plain yogurt
  • 1/4 cup heavy cream
  • 1/4 cup cashew nuts, ground into a paste
  • 2 tbsp ghee or vegetable oil
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp garam masala
  • 1/2 tsp ground turmeric
  • 1/2 tsp chili powder (optional)
  • 1/2 cup chicken broth
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat ghee or oil in a pan over medium heat. Add the chopped onion and sauté until golden brown.
  2. Add garlic and ginger, cook for another 2 minutes until fragrant.
  3. Transfer the onion mixture to the slow cooker.
  4. Add chicken pieces, ground coriander, cumin, garam masala, turmeric, chili powder (if using), and salt. Stir to coat the chicken in the spices.
  5. Mix the yogurt, heavy cream, cashew paste, and chicken broth together, then pour over the chicken in the slow cooker.
  6. Cover and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is tender.
  7. Stir the korma gently before serving and garnish with fresh cilantro.

Notes

Serve with basmati rice or naan bread for a complete meal. For a richer flavor, toast the spices before adding to the slow cooker.
