Slow Cooker Goulash is a hearty and comforting one-pot meal featuring tender ground beef, tomatoes, and elbow macaroni simmered to perfection. This easy recipe is perfect for busy weeknights and delivers rich, classic flavors with minimal effort.

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) tomato sauce
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 cup beef broth
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • 2 cups elbow macaroni, uncooked
  • 1 cup shredded cheddar cheese (optional)

Instructions

  1. In a skillet over medium heat, cook ground beef with chopped onion and minced garlic until beef is browned and onions are softened; drain excess fat.
  2. Transfer the beef mixture to the slow cooker.
  3. Add tomato sauce, diced tomatoes with juice, beef broth, paprika, Italian seasoning, salt, and pepper to the slow cooker; stir to combine.
  4. Cover and cook on low for 5 hours.
  5. About 30 minutes before serving, stir in the uncooked elbow macaroni and cover again.
  6. Cook for an additional 30 minutes or until macaroni is tender.
  7. If desired, sprinkle shredded cheddar cheese on top and let melt before serving.

Notes

For an extra creamy texture, stir in a splash of milk or a dollop of sour cream before serving. Serve with crusty bread or a fresh green salad for a complete meal.
