  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 1 lemon, sliced
  • 2 teaspoons dried oregano
  • 1 teaspoon dried thyme
  • 1/2 cup chicken broth
  • 1/2 cup kalamata olives, pitted and halved
  • 1/2 cup diced tomatoes (optional)
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Place the chicken breasts in the slow cooker.
  2. In a bowl, mix together olive oil, garlic, oregano, thyme, salt, and pepper.
  3. Pour the olive oil mixture over the chicken, coating evenly.
  4. Arrange lemon slices and kalamata olives on top of the chicken.
  5. Pour the chicken broth around the chicken.
  6. Cover and cook on low for 6-7 hours or high for 3-4 hours until the chicken is tender and cooked through.
  7. Optional: Stir in diced tomatoes during the last hour of cooking for added flavor.
  8. Garnish with fresh parsley before serving.
