Snickerdoodle Banana Bread

This Snickerdoodle Banana Bread combines the warm cinnamon sugar flavors of classic snickerdoodles with moist, ripe bananas for a deliciously spiced and tender quick bread perfect for breakfast or dessert.

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 ripe bananas, mashed
  • ½ cup sour cream or plain Greek yogurt
  • 2 teaspoons ground cinnamon (for topping)
  • 2 tablespoons granulated sugar (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a medium bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
  3. In a large bowl, cream the softened butter and sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each addition, then stir in the vanilla extract.
  5. Mix in the mashed bananas and sour cream until combined.
  6. Gradually fold the dry ingredients into the wet ingredients until just combined; do not overmix.
  7. Pour the batter into the prepared loaf pan.
  8. In a small bowl, mix the cinnamon and sugar for the topping and sprinkle evenly over the batter.
  9. Bake for 60-70 minutes or until a toothpick inserted into the center comes out clean.
  10. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

For an extra crunch, sprinkle chopped pecans or walnuts on top before baking. Serve warm with a pat of butter or cream cheese for added richness.
