  • 1 cup sourdough starter (discard or active)
  • 1 1/2 cups rolled oats
  • 1/2 cup whole wheat flour
  • 1/4 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup fresh blueberries
  • Optional: 1/4 cup chopped nuts (walnuts or pecans)

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. In a large bowl, combine sourdough starter, honey (or maple syrup), melted coconut oil, and vanilla extract; mix until smooth.
  3. In a separate bowl, whisk together rolled oats, whole wheat flour, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. Gently fold in fresh blueberries and optional nuts.
  6. Pour batter into the prepared baking pan, spreading evenly.
  7. Bake for 25-30 minutes, or until edges are golden and a toothpick inserted in the center comes out clean.
  8. Let cool completely in the pan before cutting into bars. Store in an airtight container.
