Delight in these light, fluffy sourdough discard sugar donuts that transform discarded starter into a sweet, crispy treat perfect for breakfast or snack time.

  • 1 cup sourdough discard
  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup buttermilk
  • 1 large egg
  • 2 tbsp melted butter
  • 1 tsp vanilla extract
  • Vegetable oil, for frying
  • 1/2 cup granulated sugar (for coating)
  • 1 tsp ground cinnamon (optional for coating)

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. In a separate bowl, mix the sourdough discard, buttermilk, egg, melted butter, and vanilla extract until well combined.
  3. Pour the wet ingredients into the dry ingredients and gently fold until just combined; do not overmix.
  4. Cover the dough and refrigerate for 30 minutes to rest.
  5. On a floured surface, roll the dough to about 1/2-inch thickness.
  6. Cut out donuts using a donut cutter or two round cutters of different sizes.
  7. Heat vegetable oil in a deep fryer or heavy-bottomed pot to 350°F (175°C).
  8. Carefully fry the donuts in batches, about 1-2 minutes per side, until golden brown.
  9. Remove donuts with a slotted spoon and drain on paper towels.
  10. While still warm, toss the donuts in sugar mixed with cinnamon (if using) to coat evenly.
  11. Serve warm and enjoy!

For extra flavor, try dipping the warm donuts in melted chocolate or glaze them with a simple powdered sugar icing.
