This Spaghetti Squash Dinner is a healthy and delicious way to enjoy a comforting meal. Roasted spaghetti squash is tossed with your favorite sauce and toppings for a simple yet satisfying dish.

  • 1 medium spaghetti squash
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup marinara sauce
  • 1/4 cup grated Parmesan cheese
  • Optional: cooked ground beef, sausage, or vegetables

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and remove the seeds.
  3. Drizzle the cut sides with olive oil and season with salt and pepper.
  4. Place the squash cut-side down on a baking sheet.
  5. Roast for 40-50 minutes, or until the squash is tender and easily pierced with a fork.
  6. Let cool slightly, then use a fork to scrape the flesh into spaghetti-like strands.
  7. Toss the spaghetti squash with marinara sauce and your choice of toppings.
  8. Sprinkle with Parmesan cheese and serve immediately.

Notes

For added flavor, try roasting the squash with garlic cloves or herbs. You can also substitute the marinara sauce with pesto or a creamy tomato sauce.
