  • 2 tbsp granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup buttermilk
  • 1 large egg
  • 2 tbsp melted butter
  • 1 tsp vanilla extract
  • 1/4 cup granulated sugar (for topping)
  • 1 tsp ground cinnamon (for topping)
  • Butter or oil, for cooking

Instructions

  1. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  2. In a separate bowl, mix buttermilk, egg, melted butter, and vanilla extract until combined.
  3. Pour the wet ingredients into the dry ingredients and stir gently until just combined; do not overmix—lumps are okay.
  4. Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
  5. Pour 1/4 cup of batter per pancake onto the skillet.
  6. Cook until bubbles form on the surface and edges look set, about 2-3 minutes.
  7. Flip and cook the other side for another 1-2 minutes until golden brown and cooked through.
  8. In a small bowl, combine 1/4 cup granulated sugar and 1 tsp ground cinnamon.
  9. While pancakes are still warm, brush lightly with melted butter and sprinkle generously with the cinnamon sugar mixture.
  10. Serve immediately and enjoy your churro-inspired pancakes!
