  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp smoked paprika
  • ½ tsp ground cinnamon
  • ½ tsp cayenne pepper (adjust to taste)
  • 1 can (14 oz) diced tomatoes
  • ½ cup vegetable or chicken broth
  • 1 red bell pepper, sliced
  • ½ cup green olives, pitted and halved
  • 1 tbsp harissa paste
  • Fresh cilantro, chopped (for garnish)
  • Salt and freshly ground black pepper, to taste
  • Lemon wedges (for serving)

Instructions

  1. Heat olive oil in a large skillet or tagine over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
  2. Add the minced garlic, cumin, coriander, smoked paprika, cinnamon, and cayenne pepper. Stir and cook for 1-2 minutes until fragrant.
  3. Pour in the diced tomatoes and broth, stir in harissa paste, and bring the mixture to a simmer.
  4. Add sliced red bell pepper and olives. Cover and cook for 10 minutes to allow flavors to meld.
  5. Season shrimp with salt and pepper, then nestle them into the sauce. Cover and cook until shrimp are opaque and cooked through, about 5-7 minutes.
  6. Garnish with freshly chopped cilantro and serve with lemon wedges alongside couscous or crusty bread.

Notes

For extra depth, let the tagine sit covered off the heat for 10 minutes before serving to allow the flavors to develop fully.
