Sparkling Stained Glass Cookie

These Stained Glass Cookies are beautiful and delicious! The colorful hard candy centers create a stunning effect that’s perfect for the holidays or any special occasion.

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • Hard candies in assorted colors, crushed

Instructions

  1. In a large bowl, cream together the butter and sugar until light and fluffy.
  2. Beat in the eggs one at a time, then stir in the vanilla.
  3. In a separate bowl, whisk together the flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Divide the dough in half, flatten into disks, and wrap in plastic wrap. Refrigerate for at least 1 hour.
  6. Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  7. On a lightly floured surface, roll out one disk of dough to about 1/4-inch thickness.
  8. Use cookie cutters to cut out desired shapes. Use a smaller cutter to cut out a shape in the center of each cookie.
  9. Place the cookies on the prepared baking sheets.
  10. Fill the center cutouts with crushed hard candies.
  11. Bake for 8-10 minutes, or until the edges of the cookies are lightly golden and the candy is melted.
  12. Let the cookies cool completely on the baking sheets before removing.

Notes

For a festive touch, dust the cooled cookies with powdered sugar.
