Strawberry White Chocolate Muffins

  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 3/4 cup buttermilk
  • 1/3 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 1/2 cups fresh strawberries, chopped
  • 3/4 cup white chocolate chips

Instructions

  1. Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, and sugar.
  3. In another bowl, beat the eggs, then add buttermilk, vegetable oil, and vanilla extract. Mix well.
  4. Pour wet ingredients into dry ingredients and stir until just combined.
  5. Gently fold in chopped strawberries and white chocolate chips.
  6. Divide batter evenly into muffin cups, filling about 2/3 full.
  7. Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For an extra touch, sprinkle some coarse sugar on top before baking to add a sweet, crunchy crust.
