Swedish Coffee Cake Caramels

Swedish Coffee Cake Caramels blend rich caramel with the warm, cinnamon-spiced flavors of traditional Swedish coffee cake for a deliciously unique treat.

  • 1 cup granulated sugar
  • 6 tbsp unsalted butter
  • 1/2 cup heavy cream
  • 1/4 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cardamom
  • 1 tsp vanilla extract
  • 1 tbsp finely chopped pecans (optional)

Instructions

  1. In a heavy saucepan, melt the sugar over medium heat, stirring constantly until it turns a deep amber color.
  2. Add the butter and stir until fully melted and combined with the sugar.
  3. Slowly pour in the heavy cream while stirring; be careful as the mixture will bubble vigorously.
  4. Add salt, ground cinnamon, and ground cardamom, stirring to combine evenly.
  5. Cook the mixture to 245°F (118°C) using a candy thermometer for a firm caramel consistency.
  6. Remove from heat and stir in vanilla extract and chopped pecans if using.
  7. Pour the caramel into a parchment-lined 8×8 inch pan and let cool completely at room temperature.
  8. Once set, cut into small squares and store in an airtight container.

Notes

For an extra touch, sprinkle sea salt on top before the caramel sets for a delightful sweet-salty contrast.
